Executive Chef

Dale Spinks, executive chef, is a third generation chef from New Jersey and graduate of The Culinary Institute of America. His career started at a very young age in his family’s restaurant washing dishes and bussing tables - he always knew cooking was his passion. Dale came to The Long Room in 2015 after leading kitchens in some iconic NY establishments such as The London Hotel, Niles NYC and The Hotel Thayer at West Point.
